Ingredients
- 2 ½ Cups Meyer lemons peels (10-15 lemons depending on size)
- 750ml Vodka
- 3 ½ Cups sugar
- 3 ½ Cups water
Preparation
- Rinse and scrub clean the Meyer lemons. Cut the peel of the Meyer lemons into large strips making sure to remove any white pith. Place Meyer lemon peels into a 1 quart glass sealable jar.
- Add vodka to lemon peels, cover tightly and store in a dark, cool place for 1 week or up to 1 month, shake mixture every other day. The longer the mixture infuses, the more “lemony” it will become.
- Place a mesh strainer in medium-sized bowl and line it with cheesecloth and strain the lemon-vodka mixture. When finished straining, squeeze the lemon peels in the cheese cloth to extract as much liquid and flavor as possible. Throw away cheesecloth and peels.
- After your lemon has infused for the desired amount of time, heat water and sugar on medium heat, whisk until the sugar has completely dissolved and simmer for 5 minutes. Let the syrup cool completely, this will take about 1 hour.
- Combine syrup and vodka mixture in a bowl, bottle or jar and refrigerate. Let the Limoncello chill, gently shake before service. Keep refrigerator in a sealed container for up to six months.
