Blueberry Jam Chia Pudding

Ingredients
- 1/2 cup milk of choice
- 2 Tablespoons chia seeds
- 1/2 Teaspoon vanilla extract
- 1-2 Teaspoons sweetener of choice
- 1/2 Cup blueberries (fresh or frozen)
- 1/2 Teaspoon Lemon juice
- Pinch of salt
Preparation
- Add milk, chia seeds, vanilla, and sweetener to a small jar. Mix well and let sit for 15 min.
- Meanwhile, make blueberry jam. Combine blueberries, lemon juice, and salt in a small saucepan over medium heat. Stir and mash blueberries until they have broken down and thickened slightly 10-15 min. Remove from saucepan and let cool completely.
- Give chia pudding another mix to break up any seeds that have stuck together.
- Once the blueberry jam has cooled, add it to the top of the chia pudding. Enjoy right away or store in an airtight container in the fridge for up to 4 days. This can also be stored in the freezer for several weeks.
Pro Tip: This recipe can easily be doubled or tripled. Store the extras in the freezer for an easy healthy snack!
