Ingredients
- 3 tablespoons butter
- 1/2 cup milk
- 1/2 cup organic all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 teaspoon vanilla extract or vanilla bean paste
- 1-2 ripe peaches, peeled and sliced
- butter, maple syrup, and/or powdered sugar for serving
Preparation
- Preheat oven to 425 F (218 C). Place the butter in a 10-inch cast iron skillet and place in the oven to melt (don’t forget it or it will burn!).
- Put the milk, flour, eggs, salt, cinnamon, and vanilla in a blender pitcher (you can also do this in a bowl with a whisk). Blend until smooth.
- Pour the batter over the melted butter in the skillet. Arrange the peach slices on top. Bake in preheated oven for 15 to 20 minutes, or until golden brown.
- Serve hot with lots of butter and a drizzle of maple syrup or a sprinkle of powdered sugar.
