Ingredients
- ½ cup old-fashioned rolled oats
- 1 cup milk (or any milk alternative)
- 1 egg
- 1–2 tsp maple syrup or honey (to taste)
- ¼ tsp vanilla extract
- Pinch of salt
- ½ fresh peach, sliced
- ¼ cup fresh or frozen blueberries

Preparation
- Whisk the custard base: In a small bowl, beat the egg, milk, vanilla, and sweetener until well combined.
- Cook the oats: In a small saucepan over medium low heat, combine the custard mixture with oats and salt. Cook, stirring often, for about 5–7 minutes, until thickened and creamy. Lower the heat if it starts to bubble too much—you want it to stay silky, not scrambled.
- Add fruit: Stir in the peaches and blueberries during the last minute of cooking. Let them warm and soften slightly.
- Serve: Pour into a bowl and sprinkle with cinnamon or nutmeg if desired. Add a little extra milk or syrup on top if you like it creamier or sweeter.
