Meyer Lemon Blondies

This fun easy recipe features our delicious organic Meyer Lemons from sunny California available every Spring. 🍋


  • 1 cup (5 oz) all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/4 cup plain Greek yogurt (I use fage 2%)
  • 3 Tablespoons vegetable oil
  • zest of 3 Meyer lemons
  • 2 Tablespoons fresh Meyer lemon juice


  • 1 cup powdered sugar
  • zest of 1 Meyer lemon
  • 2 to 4 Tablespoons fresh Meyer lemon juice


  1. Preheat oven to 350. Line an 8×8 baking dish with foil and spray with cooking spray.
  2. Combine flour, sugar, salt and baking soda in bowl. Set aside. Combine 2 eggs, greek yogurt, vegetable oil, Meyer lemon zest and juice to another bowl.
  3. Pour wet ingredients into dry ingredients and stir to combine. Don’t over-mix. Pour into prepared baking pan. **Let mixture rest for 10 min so the baking soda can work its magic.** Bake 18-22 minutes. To test for doneness, insert a toothpick in the center, it should come out clean or with just a few moist crumbs.
  4. While the blondies bake, prepare the glaze. Whisk glaze ingredients together until desired consistency is reached. Set aside.
  5. When the blondies are done, let cool in pan for 5 minutes. Remove from pan and let cool completely. Don’t apply the glaze until the blondies are completely cooled.
  6. After they are cooled, apply Meyer lemon glaze, slice and enjoy!! 🍋
