Meyer Lemon Blondies

This fun easy recipe features our delicious organic Meyer Lemons from sunny California available every Spring. 🍋
Ingredients
- 1 cup (5 oz) all-purpose flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 eggs
- 1/4 cup plain Greek yogurt (I use fage 2%)
- 3 Tablespoons vegetable oil
- zest of 3 Meyer lemons
- 2 Tablespoons fresh Meyer lemon juice
Glaze:
- 1 cup powdered sugar
- zest of 1 Meyer lemon
- 2 to 4 Tablespoons fresh Meyer lemon juice
Instructions
- Preheat oven to 350. Line an 8×8 baking dish with foil and spray with cooking spray.
- Combine flour, sugar, salt and baking soda in bowl. Set aside. Combine 2 eggs, greek yogurt, vegetable oil, Meyer lemon zest and juice to another bowl.
- Pour wet ingredients into dry ingredients and stir to combine. Don’t over-mix. Pour into prepared baking pan. **Let mixture rest for 10 min so the baking soda can work its magic.** Bake 18-22 minutes. To test for doneness, insert a toothpick in the center, it should come out clean or with just a few moist crumbs.
- While the blondies bake, prepare the glaze. Whisk glaze ingredients together until desired consistency is reached. Set aside.
- When the blondies are done, let cool in pan for 5 minutes. Remove from pan and let cool completely. Don’t apply the glaze until the blondies are completely cooled.
- After they are cooled, apply Meyer lemon glaze, slice and enjoy!! 🍋
