Ingredients
- 2 Cups heavy cream
- 2/3 Cup sugar
- Pinch of salt
- 1 Tablespoon Meyer lemon zest
- 6 Tablespoons Meyer lemon juice
- Optional garnish: Fresh berries
Preparation
- In a medium heavy-bottom saucepan, combine heavy cream, sugar, salt, and zest. Bring to a boil over medium heat, stirring occasionally. Don’t walk away. If the mixture starts to boil over, remove from heat.
- Once boiling, reduce heat to simmer. Simmer for 8-12 minutes, or until mixture reduces to 2 cups.
- After the mixture reduces, remove from heat. Mix in lemon juice and let stand for about 5 minutes, a skin should form on the top.
- Strain mixture and portion into small jars or ramekins. Depending on how much you portion, you should have 4-6 individual portions.
- Refrigerate for 3 hours.
- Garnish with fresh berries, serve and enjoy!
