Meyer Lemon Roasted Potatoes

This delicious side dish features our tasty organic Meyer Lemons from sunny California available every Spring. πŸ‹

This recipe serves two but can easily be doubled or tripled.


  • 1 pound Yukon gold potatoes peeled and sliced into 1/2 inch wedges
  • 2-3 Garlic cloves minced
  • 2 Tablespoons Extra Virgin Olive Oil
  • 3/4 Cup Chicken Stock
  • 2 Tablespoons Dry White Wine
  • Zest and juice from 1 Meyer lemon
  • Salt and pepper to taste
  • 2 T of your favorite fresh herbs (we love rosemary and thyme!)


  1. Preheat oven to 400Β°.
  2. Combine all ingredients into an 8×8 baking dish.
  3. Bake for 25-30 minutes. Give the potatoes a good mix and bake for an additional 25-30 minutes or until the majority of the liquid has been absorbed. The potatoes will start to brown and crisp up! They’re done when a pairing knife slips in and meets with little to no resistance.
  4. Top with additional fresh herbs and lemon zest.

Serve with roast chicken, grilled steak or fish!
