Strawberry Crisp

Ingredients
3 cups fresh strawberries, hulled and halved
2 tbsp granulated sugar
1 tbsp brown sugar
1 tbsp cornstarch
1 tsp lemon juice
½ tsp vanilla extract
Pinch of salt
½ cup rolled oats
⅓ cup all-purpose flour
⅓ cup brown sugar
¼ tsp cinnamon
Pinch of salt
4 tbsp cold butter, cubed
Preparation
Preheat oven to 350°F. Lightly butter a small baking dish or 8×8 pan.
Make the filling: In a bowl, gently toss strawberries with granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, and salt. Spread evenly in the baking dish.
Make the topping: In another bowl mix oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a fork or your fingers until crumbly.
Assemble: Sprinkle topping evenly over strawberries.
Bake 30–35 minutes until the filling is bubbling and the topping is golden.
Rest 10 minutes before serving so the filling thickens.
Optional but great: Serve warm with vanilla ice cream or whipped cream. 🍓
