Strawberry Jam

This recipe features our Michigan strawberries from Walker Farms available every spring. This recipe creates approximately three 8-ounce jars.
Ingredients
- 3 pints strawberries
- 3 tablespoons Sure-Jell
- 2 ½ cups sugar
- 1/8 teaspoon kosher salt
- 2 tablespoons fresh lemon juice
- 1 ½ teaspoons lemon zest
- 1/8 teaspoon vanilla
Instructions
- Mix Sure-Jell, ½ c sugar, kosher salt in a bowl and set aside.
- Hull and crush strawberries in thick gauged pot.
- Add lemon juice, lemon zest, vanilla to crushed strawberries, and combine.
- Bring strawberries to a simmer on medium heat for 10 minutes.
- Turn heat up and bring strawberry mixture to a boil.
- Add Sure-Jell mixture and whisk together. While whisking carefully add the remaining 2 cups of sugar.
- Whisk on a boil for one minute. Remove from heat.
- Carefully ladle strawberry jam into warmed jars.
- Let cool to room temperature, cover the jar with lids and store in refrigerator.
- Let jam set for 12 hours, serve. Unsealed, refrigerated jam will last up to one month.
