10 Honeycrisp apples

1 orange

4 cinnamon sticks

1 teaspoon whole cloves

¼ teaspoon ground nutmeg

1 ounce peeled fresh ginger

½ cup dark brown sugar

½ teaspoon salt

8 cups water

  1. Quarter Honeycrisp apples and core seeds. Peel and quarter orange and place all fruit in a large pot.
  2. Add cinnamon sticks, whole cloves, nutmeg, fresh ginger, brown sugar and salt.
  3. Add water until apples are covered, about 8 cups.
  4. Place pot on stove and bring to a boil.
  5. Turn heat down to medium low heat and simmer for 3 hours.
  6. Remove from heat and use a potato masher to carefully mash all apples.
  7. Return to medium-low heat and simmer for 1 hour.
  8. Strain cider through a fine mesh strainer, pressing solids to extract flavor.
  9. Serve cider warm or refrigerate for up to 2 weeks.
