Peach Farro Salad

Ingredients
- 1 ½ cups uncooked farro
- 2 ripe peaches, sliced
- ½ cup thinly sliced red onion
- 5-6 fresh basil leaves, chopped
- ¼ cup toasted walnuts
- 2 ounces creamy goat cheese, crumbled
For Dressing
- ¼ cup olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- ½ tsp salt
- ¼ tsp black pepper
Preparation
- Cook farro according to package directions. Drain and rinse with cool water. Transfer to a bowl and chill for 30 minutes in refrigerator.
- Add peaches, red onion and basil to bowl with farro.
- Stir together ingredients for dressing and pour over salad. Top with toasted walnuts and goat cheese. Serve right away.
