Ingredients

  • 3 peaches (about 1.5 cups) peeled and chopped
  • 1 pint cherry tomatoes, chopped
  • 1/2 red onion, chopped
  • 1 large jalapeno, chopped
  • 3 cloves garlic, chopped

Seasonings:

  • 1-2 limes, juiced
  • 1 T avocado oil
  • 1/2 t cumin
  • 1/2 t chili powder
  • salt / pepper
  • Optional: 1/2 bunch chopped cilantro

Instructions

Combine all chopped veggies, oil and seasonings, stir and refrigerate an hour (or overnight) before serving for best flavor!
