Spiced Pear Compote

This recipe from @JennaFreshAndFit features our Oregon pears from Kiyokawa Family Orchards available every October. 🍐
Ingredients
- 6 ripe pears, (mixed variety)
- 4 tbsp unsalted butter
- 1 tbsp fresh lemon juice
- 1/2 tsp pure vanilla bean paste or extract
- 1/3 cup light brown sugar, packed
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/4 tsp sea salt
- 1/8 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 2 tsp vanilla bean paste
- 1 tbsp lemon juice
Instructions
- Peel and core pears. Slice pears ¼ – ½ inch thick.
- Melt butter in the bottom of a medium pot. Add pears, lemon juice, vanilla bean, brown sugar and spices to the pot. Stir gently to coat pears.
- Continue to cook, stirring regularly for 10-15 minutes, until liquid thickens and pears are soft. Cool mixture until warm. Serve or store in an airtight jar in refrigerator.
