Chicken with Sautéed Pears

Ingredients
- 1 large chicken breast sliced in half
- 1 pear sliced into 3/4 inch wedges, core removed
- Vegetable oil
- Salt and pepper
- 3/4 cup chicken broth
- 1 Teaspoon sugar
- 1 Tablespoon Balsamic vinegar
- 1 Tablespoon butter
- Crumbled cheese (I used cotija)
Preparation
- Slice the chicken into two pieces and season with salt and pepper.
- Add pear wedges to small bowl and sprinkle evenly with sugar, salt and pepper. Set aside.
- Heat 2 teaspoons of oil in a 10 inch skillet. Add chicken to skillet and sauté on both sides until the internal temperature reaches 165°, 5-8 minutes. Remove from skillet.
- Add 1 teaspoon oil to now-empty skillet. Add pears and cook 1-2 minutes on each side until well browned.
- Add chicken broth to skillet and continue to cook for 5 more minutes until it has thickened. Remove pears.
- Off heat, whisk in balsamic and butter.
- Add chicken to plate, top with pears, sauce and crumbled cheese. Enjoy!
